Gas Interlock Systems
All new commercial kitchen installations that use gas fired appliances must now have a device fitted that prevents the gas from being turned on until the fume extraction system is extracting air (commonly know as a gas interlock sytem). The British Standard BS 6173 (2001) has been amended to provide users of gas fired catering appliances with protection against the effects of exposure to combustion gases given off when gas is used for cooking.
The standard gas interlock system comprises of:
An alarm control panel with visual indicators and an audible alarm
Current monitors or airflow switches
An emergency stop button
Gas solenoid valve
Additional features may also be added if required:
Gas pressure proving
Gas detection
Alarm bypass systems
